For many years St
Ives has had a good selection
of restaurants, but in recent years there has been
an explosion of fantastic, quality restaurants
in the town. There are restaurants and cafes
to suit all tastes and budgets with many
specialising in locally caught fish.

Roast Sea Bass with tomato and basil
couscous
& saffron dressing
Sweat some shallots and
garlic in a little olive oil, add couscous & tomato consommé and simmer
until the liquid us absorbed. Add ripped basil leaves and season with
fresh lemon juice, rock salt and a few concasse tomatoes (fresh tomatoes
skinned and finely chopped).
Pan fry the Sea Bass in a little olive oil, skin side down for 3
minutes then turn and fry for a further 2 minutes.
Remove the Sea Bass, and warm the remaining olive oil with white
wine vinegar, pinch of saffron, more concasse tomatoes and finely
chopped chives.
Present the Sea Bass on top of the couscous, surround it with a tomato
and basilrouille, and drizzle over the infused saffron oil.
